Ingredients
  

  • 1 1/2 cups CHOCOLATE COOKIE CRUMBS
  • 1/4 cup MELTED BUTTER
  • 8 oz CREAM CHEESE
  • 1 cup POWDERED SUGAR
  • 1 tsp PEPPERMINT EXTRACT
  • 2-3 drops RED FOOD COLORING
  • 2 cups HEAVY WHIPPING CREAM
  • 1/2 cup CRUSHED CANDY CANES

Instructions
 

Step 1:

  • Mix your chocolate cookie crumbs and melted butter. Stir them until they look like wet sand. Press them into your pie dish very firmly. Use a glass to help you press. Chill the crust in the fridge for now. This helps it stay together later.

Step 2:

  • Beat the soft cream cheese in a bowl. Use your electric mixer on medium speed. Add the powdered sugar and peppermint extract now. Mix until the texture is very smooth. There should be no lumps at all. This makes the filling very creamy.

Step 3:

  • Add a few drops of red food coloring. Stir it in until the color is pink. You can add more for darker pink. The pink color should be very even. Do not leave any white streaks behind. This looks beautiful with the white cream.

Step 4:

  • Whip the heavy cream in a separate bowl. It should have very stiff peaks. Gently fold this into the pink mix. Use a spatula and move very slowly. Do not deflate the fluffy whipped cream. This keeps the pie very light.

Step 5:

  • Fold in half of the crushed candy canes. Stir them in very gently with your spatula. Pour the filling into your chilled crust. Smooth the top with a flat knife. This makes the pie look very professional. It is now ready for the chill.

Step 6:

  • Cover the pie with some clean plastic wrap. Place it in the fridge for four hours. It needs time to get firm. Overnight is even better for the texture. Sprinkle the rest of the candy later. Do this right before you serve it.

Chill your bowl before whipping the heavy cream.
Do not add candy canes too early.
They might melt and leak red color everywhere.
