Equipment

  • Large Mixing Bowl
  • Electric Hand Mixer
  • Whisk
  • Two Cake Pans
  • Parchment Paper
  • Rubber Spatula
  • Wire Cooling Rack
  • Measuring cups
  • Measuring Spoons
  • Off-set Spatula

Ingredients

  • 2 cups ALL-PURPOSE FLOUR
  • 2 cups SUGAR
  • 3/4 cup COCOA POWDER
  • 1.5 tsp BAKING POWDER
  • 1.5 tsp BAKING SODA
  • 1 tsp SALT
  • 2 large EGGS
  • 1 cup MILK
  • 1/2 cup VEGETABLE OIL
  • 2 tsp VANILLA EXTRACT
  • 1 cup BOILING WATER

Ingredients for the Frosting:

  • 1 cup CREAMY PEANUT BUTTER
  • 1/2 cup UNSALTED BUTTER
  • 3 cups POWDERED SUGAR
  • 3 tbsp HEAVY CREAM

Instructions

Step 1:

  • Preheat your oven to 350 degrees Fahrenheit. Grease two eight-inch cake pans very well. Line the bottoms with round parchment paper.

Step 2:

  • Add flour and sugar to a large bowl. Add cocoa, baking powder, and baking soda. Whisk them until the color is even.

Step 3:

  • Crack the eggs into the dry mix. Pour in the milk, oil, and vanilla. Mix on medium speed for two minutes.

Step 4:

  • Stir in the boiling water by hand. The batter will look very thin now. Do not worry about the thin batter.

Step 5:

  • Divide the batter between the two pans. Pour slowly to keep the pans equal. This helps the cakes bake evenly.

Step 6:

  • Bake the cakes for thirty-five minutes. Insert a toothpick to check the center. It should come out clean and dry.

Step 7:

  • Cool the cakes in pans for ten minutes. Then move them to a wire rack. Let them cool down completely before frosting.

Step 8:

  • Beat the butter and peanut butter together. Use a clean bowl for the frosting. Beat until the mix is very smooth.

Step 9:

  • Add powdered sugar one cup at a time. Mix on low speed to avoid dust. Add a splash of milk or cream.

Step 10:

  • Place one cake layer on a plate. Spread a thick layer of frosting on top. Place the second cake layer on top.

Step 11:

  • Frost the top and sides of the cake. Use a spatula to make it smooth. You can add swirls for a nice look.

Notes

  • Use room temperature eggs for a smooth batter.
  • Do not overmix the batter after adding water.
  • Sift the cocoa powder to remove hard lumps.
  • Use creamy peanut butter for a silky frosting.
  • Measure the flour using the spoon and level.
  • Cool the cakes fully before you start frosting.
  • Hot cakes will melt the peanut butter frosting.
  • Use a high-quality cocoa for the best color.
  • Add more cream for a thinner cake frosting.
  • Grease the pans well to prevent any sticking.
