Ingredients
  

  • 1 lb CHICKEN GIZZARDS
  • 1 cup ALL-PURPOSE FLOUR
  • 1 tsp GARLIC POWDER
  • 1 tsp ONION POWDER
  • 1/2 tsp BLACK PEPPER
  • 1 tsp SALT
  • 2 large EGGS
  • 1/4 cup MILK
  • 2 cups VEGETABLE OIL

Instructions
 

Step 1:

  • Clean the gizzards under cold running water. Remove any yellow skin or excess fat. Place them into your large pot.

Step 2:

  • Cover them with two inches of water. Add a pinch of salt to water. Bring the pot to a rolling boil.

Step 3:

  • Reduce heat to a very low simmer. Cover the pot with a tight lid. Cook them for about 45 minutes total.

Step 4:

  • Drain the gizzards in a large colander. Let them sit for five minutes now. The meat should be dry to touch.

Step 5:

  • Take one bowl for the dry ingredients. Mix flour, garlic, onion, and pepper. Stir them well with a small whisk.

Step 6:

  • Take a second bowl for wet ingredients. Whisk the eggs and milk together well. The mixture should be very smooth.

Step 7:

  • Heat your oil in a heavy skillet. The oil should reach 350 degrees. Use a thermometer to check the heat.

Step 8:

  • Dip a gizzard into the flour mix. Shake off any extra white powder. Now dip it into the egg wash.

Step 9:

  • Place the gizzard back into the flour. Press the flour onto the meat firmly. This creates a very thick crust.

Step 10:

  • Drop the pieces into the hot oil. Do not crowd the frying pan. Fry for three to five minutes.

Step 11:

  • Remove the gizzards with your metal tongs. Place them on the paper towels. Serve them while they are very hot.

Notes

  • Always boil the gizzards before you fry them. This makes them soft.
  • Use a thermometer to check the oil heat. 350 degrees is best.
  • Double coat the meat for a thicker crust. It adds more crunch.
