Ingredients
  

  • 2 cups ALL-PURPOSE FLOUR
  • 2 cups GRANULATED SUGAR
  • 1/2 cup UNSWEETENED COCOA POWDER
  • 1 tsp BAKING SODA
  • 1/2 tsp SALT
  • 1 cup BUTTERMILK
  • 1/2 cup VEGETABLE OIL
  • 2 large EGGS
  • 1 cup BOILING WATER
  • 1 cup EVAPORATED MILK
  • 1 cup GRANULATED SUGAR for frosting
  • 3 large EGG YOLKS
  • 1/2 cup BUTTER
  • 1 tsp VANILLA EXTRACT
  • 1 1/3 cups SHREDDED COCONUT
  • 1 cup PECAN PIECES

Instructions
 

Step 1: Preheat your oven to 350 degrees now. Grease your baking pan with some oil. This prevents the cake from sticking later.

    Step 2: Mix the flour and sugar together first. Add the cocoa powder and the salt. Use your whisk to combine them well.

      Step 3: Pour the buttermilk into a separate bowl. Add the eggs and the vegetable oil. Whisk them until they look very smooth.

        Step 4: Combine the wet and dry ingredients slowly. Add one cup of boiling water now. The batter will look very thin.

          Step 5: Pour the batter into your prepared pan. Place it in the center of oven. Bake for about thirty-five minutes total.

            Step 6: Start the frosting in a medium saucepan. Mix the milk, sugar, and egg yolks. Add the butter and turn on heat.

              Step 7: Cook the mixture on a medium heat. Stir it constantly so it does not burn. It will become thick and golden brown.

                Step 8: Remove the pan from the stove now. Stir in the coconut and the pecans. Add the vanilla and stir once more.

                  Step 9: Spread the frosting over the warm cake. Use a spatula to make it even. Let the cake cool before you eat.

                    Use room temperature eggs for a smoother batter.
                    Do not overmix the batter to keep it light.
