- 8 slices WHITE BREAD
- 50 g UNSALTED BUTTER
- 50 g RAISINS
- 300 ml WHOLE MILK
- 100 ml HEAVY CREAM
- 3 large EGG YOLKS
- 50 g CASTER SUGAR
- 1 whole VANILLA BEAN
- 1 tsp NUTMEG

Butter each slice of bread very generously. Cut the slices into small triangles or squares. Arrange half the bread in the baking dish.

Sprinkle the raisins over the first bread layer. Add the rest of the buttered bread on top. Make sure the crusts face upwards for crunch.

Heat the milk and cream in a pan. Add the vanilla seeds to the warm liquid. Do not let the mixture reach a boil.

Whisk the egg yolks and sugar together well. Slowly pour the warm milk into the eggs. Stir constantly so the eggs do not cook.

Pour the custard over the bread in the dish. Let it sit for ten minutes to soak. This makes the bread very soft and heavy.
