Dry your salmon fillets with paper towels. Make sure they are very dry.
Score the skin with a sharp knife. Make shallow cuts across the skin.
Season both sides with salt and pepper. Push the salt into the skin cuts.
Heat your pan over medium-high heat. Add a splash of olive oil.
Place the salmon skin-side down. Press it down with your fingers to keep it flat.
Cook for about four to five minutes until the skin is golden and crispy.
Flip the salmon over gently. Add the butter, garlic, and thyme to the pan.
Spoon the melted butter over the fish for two minutes.
Remove from the pan and let it rest for one minute before serving.

Dry the skin well to ensure it stays crispy. Use a cold pan to start for even cooking. Press the fish down so it stays flat. Do not overcook the salmon or it gets dry. Baste with butter for a restaurant-style finish.
