Ingredients
  

  • 1 tbsp BUTTER
  • 2 ENGLISH MUFFINS
  • 4 EGGS
  • 4 slices PARMA HAM
  • 3 EGG YOLKS
  • 1 tbsp LEMON JUICE
  • 1 tsp WHITE WINE VINEGAR
  • 1 pinch CAYENNE PEPPER
  • 1 pinch SALT

Instructions
 

Step 1: Prepare the Hollandaise Base

  • Place your egg yolks in a glass bowl. Add a splash of lemon juice and whisk. Set the bowl over simmering water carefully.

Step 2: Add the Melted Butter

  • Slowly pour in your warm melted butter now. Keep whisking the mixture very quickly. The sauce should become thick and very smooth.

Step 3: Toast the English Muffins

  • Split your muffins in half with a knife. Place them in the toaster until golden brown. Spread a little butter on them while warm.

Step 4: Sear the Parma Ham

  • Place a pan over medium-high heat. Fry the ham for thirty seconds per side. This makes the meat slightly crispy and warm.

Step 5: Poach the Fresh Eggs

  • Bring a pot of water to a simmer. Add a splash of vinegar to the water. Swirl the water to create a small whirlpool.

Step 6: Cook the Eggs Gently

  • Drop the egg into the center of the swirl. Cook it for about three minutes exactly. The yolk should still be very soft inside.

Step 7: Plate the Final Dish

  • Place the ham on top of the muffins. Carefully put the poached egg on the ham. Pour the warm hollandaise sauce over the top.

Notes

  • Use very fresh eggs for the best poached shape.
  • Do not let the water boil too hard now.
  • Keep your hollandaise sauce warm but not hot.
  • Add vinegar to the water to help the whites.
  • Toast the muffins right before you serve the dish.
  • Season your eggs with flaky salt at the very end.
