Equipment

  • Large deep pan
  • Sharp Knife
  • Cutting Board
  • Wooden Spoon
  • Measuring jugs
  • Small Bowl
  • Can opener
  • Timer

Ingredients

  • 2 large CHICKEN BREASTS
  • 150 g CHORIZO SAUSAGE
  • 1 medium ONION
  • 2 cloves GARLIC
  • 2 sticks CELERY
  • 1 GREEN BELL PEPPER
  • 250 g LONG GRAIN RICE
  • 1 tbsp CAJUN SEASONING
  • 400 g CANNED TOMATOES
  • 500 ml CHICKEN STOCK
  • 1 tsp DRIED THYME
  • 1 tbsp VEGETABLE OIL
  • 1 pinch SALT AND PEPPER
  • 1 handful FRESH PARSLEY

Instructions

Step 1:

  • Place your large pan on the stove. Turn the heat to medium. Add a splash of oil to the pan.

Step 2:

  • Cut your chicken into small bite-sized pieces. Chop the chorizo into thin round slices. Put the meat into the hot pan now.

Step 3:

  • Fry the meat for five minutes. The chorizo will release its red oil. The chicken should turn golden brown.

Step 4:

  • Chop your onion, celery, and pepper. Add these vegetables to the pan. Stir them well with your wooden spoon.

Step 5:

  • Cook the vegetables until they are soft. This usually takes about five minutes. Add the crushed garlic to the pan.

Step 6:

  • Stir in your Cajun seasoning and dried thyme. Let the spices toast for one minute. This makes the flavor much deeper.

Step 7:

  • Pour the dry rice into the pan. Stir it so every grain is coated in oil. This prevents the rice from getting mushy.

Step 8:

  • Add the canned tomatoes and the chicken stock. Give the mixture a good stir. Bring the liquid to a gentle boil.

Step 9:

  • Turn the heat down to low. Put a lid on the pan. Let it simmer for twenty minutes.

Step 10:

  • Check the rice after the time is up. It should be tender and the liquid gone. Fluff the rice with a fork.

Step 11:

  • Taste the dish and add salt if needed. Sprinkle fresh parsley over the top. Serve it hot to your hungry family.

Notes

Use high-quality chorizo for the best smoky flavor.
Do not lift the lid while the rice cooks.
You can add prawns for a seafood twist.
Make sure the chicken is cooked all the way.
Adjust the spice level by adding more Cajun seasoning.
Always wash your rice before you start cooking it.
Use a heavy pan to stop the rice burning.
