Equipment

  • Large Lidded Pan
  • Wooden Spoon
  • Sharp Knife
  • Cutting Board
  • Measuring Spoons

Ingredients

  • 600 g CHICKEN BREASTS
  • 2 tbsp SMOKED PAPRIKA
  • 2 medium ONIONS
  • 2 cloves GARLIC
  • 300 ml CHICKEN STOCK
  • 150 ml SOUR CREAM
  • 1 tbsp OLIVE OIL
  • 1 large RED BELL PEPPER
  • 1 pinch SALT
  • 1 pinch BLACK PEPPER

Instructions

Step 1:

  • Cut your chicken breasts into small, bite-sized chunks. Sprinkle the salt and pepper over the meat pieces. This ensures the chicken is seasoned on all sides.

Step 2:

  • Heat the olive oil in your large lidded pan. Add the chicken chunks to the hot oil carefully. Fry them until they turn a light golden brown.

Step 3:

  • Remove the chicken from the pan and set aside. Add the sliced onions and peppers to the same pan. Cook them until they become soft and see-through.

Step 4:

  • Stir in the garlic and the smoked paprika now. Cook for one minute so the spices smell fragrant. Do not let the garlic burn in the pan.

Step 5:

  • Pour the chicken stock into the pan slowly. Add the golden chicken pieces back into the liquid. Bring the mixture to a very gentle simmer now.

Step 6:

  • Put the lid on the pan for fifteen minutes. Let the chicken cook through in the bubbling sauce. The flavors will blend together beautifully during this time.

Step 7:

  • Turn the heat down to a very low setting. Stir in the thick sour cream very gently now. Do not let the sauce boil after adding cream.

Notes

  • Always use fresh garlic for the most vibrant flavor.
  • Searing the chicken first keeps the juices inside the meat.
  • Do not boil sour cream or the sauce might split.
  • Use sweet paprika if you prefer less smoky heat.
  • Add a splash of water if the sauce gets thick.
  • Fresh parsley on top adds a nice pop of color.
  • Make sure chicken is white all the way through before serving.
