Equipment

  • Large Mixing Bowl
  • Silicone Spatula
  • Small Cookie Scoop
  • Baking Sheet
  • Parchment Paper
  • Measuring cups
  • Airtight Container

Ingredients

  • 1 cup ROLLED OATS
  • 1/2 cup VANILLA PROTEIN POWDER
  • 2 tbsp INSTANT COFFEE GRANULES
  • 1/2 cup CREAMY PEANUT BUTTER
  • 1/3 cup PURE MAPLE SYRUP
  • 2 tbsp GROUND FLAXSEEDS
  • 1/4 cup MINI CHOCOLATE CHIPS
  • 1 tsp VANILLA EXTRACT

Instructions

Step 1:

  • Gather your large mixing bowl and spatula. Add the dry Ingredients for Healthy Coffee Protein Balls. Put the oats and protein powder inside. Add the coffee and flaxseeds now.

Step 2:

  • Whisk the dry items together very well. Make sure there are no large clumps. The coffee should be spread out evenly. This ensures a consistent flavor later.

Step 3:

  • Now it is time for wet items. Add the peanut butter and maple syrup. Pour in the vanilla extract slowly. These items will bind the dough.

Step 4:

  • Stir the mixture with your silicone spatula. It will be thick and quite heavy. Keep mixing until a dough forms. Ensure all oats are fully coated.

Step 5:

  • Fold in the mini chocolate chips now. Do this gently so they stay whole. Distribute them evenly throughout the dough. They add a nice sweet crunch.

Step 6:

  • Taste a tiny bit of the dough. See if it needs more coffee. You can add a tea spoon more. Adjust the sweetness to your own liking.

Step 7:

  • Place the bowl in the fridge. Let it sit for ten minutes. This makes the dough less sticky. It is much easier to roll.

Step 8:

  • Take the bowl out of the fridge. Use your cookie scoop for even portions. Scoop a small amount of dough out. Drop it onto the parchment paper.

Step 9:

  • Roll the dough between your clean palms. Make a smooth and round ball shape. Apply gentle pressure while you roll it. Place it back on the sheet.

Step 10:

  • Repeat this for all the remaining dough. You should get about twelve large balls. Space them out on the baking sheet. They are now ready to eat.
