Ingredients
  

  • 4 lbs BEEF BONES
  • 2 large CARROTS
  • 3 stalks CELERY
  • 1 large ONION
  • 4 cloves GARLIC
  • 1 tsp PEPPERCORNS
  • 12 cups WATER

Instructions
 

Step 1:

  • Set your oven to 400 degrees now. Place the beef bones on a tray. Roast them for thirty minutes today. This makes the flavor very dark.

Step 2:

  • Turn the bones over after twenty minutes. Let them get brown on all sides. This creates a very rich brown color. Do not let the bones burn.

Step 3:

  • Put the roasted bones in the pot. Add all the chopped vegetables now. Put the garlic and peppercorns in too. Everything should fit in the pot.

Step 4:

  • Pour the cold water over the ingredients. Make sure the water covers everything. Leave two inches of space at top. This prevents the pot from spilling.

Step 5:

  • Turn the stove to a medium heat. Wait for the water to simmer softly. Do not let it boil very hard. Hard boiling makes the stock look cloudy.

Step 6:

  • Use a spoon to skim the top. Remove any gray foam that appears. This keeps the stock tasting very clean. Do this every hour for best results.

Step 7:

  • Cook the stock for eight long hours. Keep the heat on a low setting. The water should bubble very slowly. This slow cook extracts all nutrients.

Step 8:

  • Turn off the heat after eight hours. Let the pot cool down a bit. Use a strainer to remove the solids. Keep only the clear brown liquid.

Notes

Roast the bones until they are dark brown.
Use cold water to start the cooking process.
Do not add salt until you use it.
Skim the foam to keep the stock clear.
Simmer very slowly for the best silky texture.
Keep the onion skins for a darker color.
