Equipment

  • Large Pot
  • Colander
  • Medium saucepan
  • Whisk
  • Cheese Grater
  • Kitchen Tongs

Ingredients

  • 1 lb FETTUCCINE
  • 1 pint HEAVY CREAM
  • 1/4 lb UNSALTED BUTTER
  • 1 cup PARMESAN CHEESE
  • 1 tsp KOSHER SALT
  • 1/2 tsp BLACK PEPPER
  • 1 pinch NUTMEG

Instructions

Step 1:

  • Fill a large pot with cold water. Place it on the stove. Turn the heat to high. Wait for a rolling boil.

Step 2:

  • Add two tablespoons of salt to the water. This is vital for the flavor. Salt makes the pasta taste great. Do not skip this part.

Step 3:

  • Add the fettuccine noodles to the pot. Stir them gently with your tongs. This stops them from sticking. Cook them until they are soft.

Step 4:

  • Place a saucepan on medium-low heat. Pour in the heavy cream. Add the slices of unsalted butter. Let the butter melt into the cream.

Step 5:

  • Do not let the cream boil. Keep the heat very low. Stir it slowly with your whisk. The mixture should be warm and smooth.

Step 6:

  • Grate your fresh Parmesan cheese now. Add the cheese to the saucepan. Whisk until the cheese is gone. The sauce will become very thick.

Step 7:

  • Add the pepper and the nutmeg. Stir them into the creamy sauce. Taste the sauce with a clean spoon. Add a little salt if needed.

Step 6:

  • Drain the cooked pasta in the sink. Keep a half cup of pasta water. This water is like liquid gold. It helps the sauce stick.

Step 9:

  • Put the pasta back in the large pot. Pour the hot sauce over the noodles. Toss everything together with your tongs. Add pasta water if it looks dry.

Notes

Use room temperature cream for a smoother sauce. It blends much better with the butter.
Always grate your own Parmesan cheese at home. Pre-shredded cheese has coatings that prevent melting.
Do not overcook your fettuccine noodles today. They should have a little bit of bite.
Save some pasta water before you drain it. It makes the sauce extra silky and smooth.
Serve the pasta on warm plates immediately. This keeps the sauce from getting too thick.
Add the nutmeg only at the very end. This keeps the flavor fresh and bright.
