Instructions
Step 1:
Preheat your oven to 350 degrees Fahrenheit now. Place your pie crust into the glass dish. Poke small holes in the bottom with forks.
Step 2:
Bake the crust for about ten minutes total. It should look very light and golden brown. Set it on the counter to cool down.
Step 3:
Take out your medium sized cooking saucepan now. Pour the sugar and Jello powder inside it. Add the cornstarch to the pan as well.
Step 4:
Stir the dry ingredients with a small spoon. Make sure the colors are mixed very well. There should be no white sugar streaks left.
Step 5:
Whisk the egg yolks and water together now. Do this in a separate small mixing bowl. The mixture should look very pale and yellow.
Step 6:
Pour the egg mixture into the dry saucepan. Stir it constantly to avoid any large lumps. Use a whisk for the best smooth texture.
Step 7:
Place the saucepan on the stove top now. Turn the heat to a medium setting today. Do not walk away from the hot stove.
Step 8:
Stir the mixture until it reaches a boil. It will start to look thick and glossy. This usually takes about five minutes of stirring.
Step 9:
Remove the pan from the heat right away. Pour in the fresh lemon juice very slowly. Stir it one last time with your spatula.
Step 10:
Pour the hot filling into the baked crust. Smooth the top with the back of spoons. Let it sit for just a few minutes.
Step 11:
Start beating your egg whites in a bowl. Use the electric mixer on a high speed. Beat them until they look very foamy.
Step 12:
Add the extra sugar to the egg whites. Do this one tablespoon at a time now. Keep beating until the peaks stay very stiff.
Step 13:
Spread the meringue over the hot lemon filling. Make sure it touches the edges of crust. This keeps the meringue from shrinking during baking.
Step 14:
Place the pie back into the hot oven. Bake it for about ten to twelve minutes. The meringue should look beautiful and toasted brown.
Step 15:
Remove the pie and let it cool down. Place it in the fridge for four hours. This helps the Jello set up very firmly.
Notes
Keep eggs at room temp for better fluff.
Do not overcook the lemon filling on stove.
Always use fresh lemons for the best taste.
Make sure the mixing bowl is very clean.
Chill the pie before you try to slice.
