Ingredients
  

  • 1 lb GROUND BEEF
  • 12 CORN TORTILLAS
  • 2 cups RED ENCHILADA SAUCE
  • 2 cups CHEDDAR CHEESE
  • 1/2 cup DICED ONIONS
  • 1 tsp GARLIC POWDER
  • 1 tsp CUMIN
  • 1/2 tsp SALT
  • 1/4 tsp BLACK PEPPER
  • 1/4 cup FRESH CILANTRO

Instructions
 

Step 1:

  • Heat your large skillet over medium heat. Add the ground beef to the hot pan. Break the meat into very small pieces.

Step 2:

  • Add the diced onions to the beef. Cook until the meat is no longer pink. Drain the excess fat from the pan.

Step 3:

  • Stir in the cumin and garlic powder. Add a splash of the enchilada sauce. Let it simmer for two minutes only.

Step 4:

  • Heat the corn tortillas in a small pan. They should be soft and very pliable. This takes about ten seconds per side.

Step 5:

  • Pour a little sauce into the baking dish. Spread it around to coat the bottom. This prevents the tortillas from sticking.

Step 6:

  • Place beef and cheese inside a tortilla. Roll it up tightly like a small log. Place it seam-side down in the dish.

Step 7:

  • Repeat this for all of your tortillas. Pack them closely together in the large dish. Pour the remaining sauce over the top.

Step 8:

  • Sprinkle the rest of the cheese over everything. Make sure the edges are well covered. This creates a very crispy cheese crust.

Step 9:

  • Put the dish into a hot oven. Bake at 350 degrees for twenty minutes. The cheese should be bubbly and very brown.
