Ingredients
  

  • 2 cups ALL-PURPOSE FLOUR
  • 2 tbsp SUGAR
  • 2 tsp BAKING POWDER
  • 1 tsp BAKING SODA
  • 1/2 tsp SALT
  • 2 cups BUTTERMILK
  • 2 large EGGS
  • 4 tbsp MELTED BUTTER
  • 1 tsp VANILLA EXTRACT
  • 1 tbsp VEGETABLE OIL

Instructions
 

Step 1:

  • Whisk your dry ingredients in a large bowl.
  • Combine the flour, sugar, and baking powder.
  • Add the baking soda and salt now.
  • Make sure there are no large lumps left.

Step 2:

  • Mix your wet ingredients in a separate bowl.
  • Beat the eggs until they are very light.
  • Stir in the buttermilk and melted butter.
  • Add the vanilla extract for a great scent.

Step 3:

  • Create a small well in the dry mix.
  • Pour the wet mixture into the center slowly.
  • Stir everything together with a large spoon.
  • Do not overmix the batter at this stage.
  • A few small lumps are perfectly fine.

Step 4:

  • Heat your griddle over a medium flame.
  • Lightly coat the surface with some vegetable oil.
  • Wait until the pan is nice and hot.
  • Test it with a small drop of water.

Step 5:

  • Pour 1/4 cup of batter onto the pan.
  • Leave space between each pancake for easy flipping.
  • Cook until you see bubbles on the top.
  • The edges should look dry and set.

Step 6:

  • Flip the pancakes over with your thin spatula.
  • Cook the other side for one more minute.
