Equipment

  • Large Skillet
  • Metal Tongs
  • Sharp Knife
  • Cutting Board
  • Measuring Spoons
  • Small Juicer

Ingredients

  • 1.5 lb CHICKEN BREASTS
  • 4 cloves GARLIC
  • 3 tbsp LEMON JUICE
  • 4 tbsp UNSALTED BUTTER
  • 1 tbsp OLIVE OIL
  • 1 tsp DRIED OREGANO
  • 1/2 tsp KOSHER SALT
  • 1/4 tsp BLACK PEPPER
  • 1 tbsp FRESH PARSLEY

Instructions

Step 1:

  • Wash your hands with warm soapy water. Dry them well with a clean towel. Pat the chicken breasts dry with paper.

Step 2:

  • Place the meat on a clean board. Season both sides with salt and pepper. Sprinkle the dried oregano on top too.

Step 3:

  • Press the spices into the meat firmly. This helps the flavors stick during cooking. Let the meat sit for five minutes.

Step 4:

  • Put your skillet on the stove top. Turn the heat to medium-high. Add the olive oil to the pan.

Step 5:

  • Add one tablespoon of butter to the oil. Let it melt and start to bubble. Swirl the pan to coat the bottom.

Step 6:

  • Lay the chicken in the hot skillet. Do not crowd the pieces too much. You want a good sear on each.

Step 7:

  • Cook the first side for five minutes. Do not move the meat around. This helps create a golden crust.

Step 8:

  • Flip the chicken over using your tongs. Cook the other side for five minutes. Ensure the center is no longer pink.

Step 9:

  • Remove the chicken from the pan now. Place it on a clean warm plate. Cover it loosely with a piece of foil.

Step 10:

  • Turn the heat down to medium low. Add the rest of the butter now. Add the minced garlic to the pan.

Step 11:

  • Stir the garlic for thirty seconds only. It should smell very good and fragrant. Do not let it turn brown.

Step 12:

  • Pour the lemon juice into the pan. Use a spoon to scrape the bottom. This mixes the tasty pan drippings.

Step 13:

  • Place the chicken back into the skillet. Spoon the warm sauce over the meat. Let it simmer for two minutes.

Step 14:

  • Turn off the heat from the stove. Sprinkle fresh parsley over the top. Serve the chicken while it is hot.
