Ingredients
  

  • 100 g Plain Flour
  • 75 g Buckwheat Flour
  • 1 teaspoon Caster Sugar
  • 1 teaspoon Fast Action Yeast
  • 200 ml Full Fat Milk
  • 25 g Unsalted Butter
  • 1 Large Egg
  • 1 tablespoon Vegetable Oil
  • Pinch of Sea Salt

Instructions
 

Sift the flour

  • Get your large mixing bowl ready now. Place a sieve over the large bowl carefully. Pour the plain flour into the sieve first. Add the buckwheat flour to the sieve too. Shake it until all the flour is inside. This makes the flour very light and airy.

Add dry ingredients

  • Measure your caster sugar very carefully now. Add the sugar to the flour mix. Find your packet of fast action yeast. Pour the yeast into the bowl now. Add a small pinch of sea salt too. Stir everything with a large wooden spoon. Make a small hole in the very center.

Warm the liquids

  • Heat the milk and butter in a pan. Use a very low heat for this step. Wait until the butter melts into the milk. Stir it slowly so it mixes well together. Do not let the milk get too hot.

Check the temperature

  • The milk should be warm but not hot. Dip a clean finger in to check it. Hot milk will kill the yeast very quickly. If it is too hot, let it cool. It should feel like a warm bath.

Add the egg

  • Crack your large egg into a small jug. Whisk the egg until it is very smooth. Pour the egg into the warm milk mixture. Whisk it until it is combined very well. This makes the liquid part of your recipe.

Mix the batter

  • Pour the liquid into the flour hole slowly. Whisk from the middle to avoid any lumps. Keep whisking until the batter is very smooth. It should look like thick pouring cream. Ensure there is no dry flour left behind.

Let the batter rest

  • Cover the bowl with a clean tea towel. Leave it in a warm place for an hour. The yeast needs time to work its magic. You will see bubbles on the surface soon. The batter will grow in size quite a bit.

Prep the pan

  • Put a little oil in your frying pan. Wipe it with a paper towel very carefully. This leaves a very thin layer of oil. Put the pan on a medium heat now. Let the pan get nice and hot first.

Cook the blinis

  • Drop small spoons of batter into the pan. Use a teaspoon for the perfect size. Leave space between each tiny little pancake. Do not put too many in at once. They need room to cook and spread out.

Look for bubbles

  • Wait until you see bubbles on the top. This takes about two minutes on medium heat. The edges should look dry and firm now. This means they are ready to be flipped. Use your thin spatula for this part.

Finish the cooking

  • Flip them over and cook for one minute. They should be golden brown on both sides. Lift them out of the pan very carefully. Place them on a wire rack to cool. Repeat until all of the batter is gone.

Add the toppings

  • Wait for the blinis to cool down slightly. Add a small dollop of cream cheese first. Place a piece of smoked salmon on top. Garnish with a tiny piece of fresh dill. Serve them to your guests on a tray.
