Equipment

  • Small Saucepan
  • Wooden Spoon
  • Fine Mesh Sieve
  • Food Processor
  • Glass Bowl

Ingredients

  • 250 g STRAWBERRIES
  • 2 tbsp ICING SUGAR
  • 1 tsp LEMON JUICE
  • 1 tbsp WATER

Instructions

Step 1:

  • Wash and hull your fresh strawberries first. Remove the green leafy tops with a small knife. Make sure the berries are very clean.

Step 2:

  • Cut the large berries into smaller pieces now. This helps them break down much faster. Small pieces cook evenly in the pan.

Step 3:

  • Place the berries into a small saucepan. Add your icing sugar and the fresh lemon juice. Pour in a tiny bit of water too.

Step 4:

  • Turn the stove to a medium heat setting. Stir the mixture gently with your wooden spoon. The sugar will start to melt quickly.

Step 5:

  • Let the berries simmer for five minutes. They should become very soft and mushy. They will release a lot of red juice.

Step 6:

  • Pour the warm mixture into your food processor. Blend it until the liquid looks very smooth. There should be no big fruit lumps left.

Step 7:

  • Place a fine sieve over a clean bowl. Pour the blended sauce through the mesh sieve. Do this slowly to avoid any mess.

Step 8:

  • Use a spoon to push the pulp through. This will catch all the small yellow seeds. Only the smooth sauce should go through.

Step 9:

  • Let the bright red sauce cool down completely. It is now ready to serve on desserts. You can use it warm or cold.

Notes

Use very ripe berries for the best sweetness.
Sieve the sauce twice for a smooth finish.
Add a splash of vanilla for deeper flavor.
Taste the sauce and add more sugar if tart.
Frozen berries work well if fresh are gone.
Keep the heat low to avoid burning sugar.
Use a plastic spatula to scrape the sieve.
