Ingredients
  

  • 4 large RUSSET POTATOES
  • 4 cups CHICKEN BROTH
  • 1 cup HEAVY CREAM
  • 4 tbsp UNSALTED BUTTER
  • 1/4 cup ALL-PURPOSE FLOUR
  • 1 medium YELLOW ONION
  • 2 cloves GARLIC
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER

Instructions
 

Step 1:

  • Wash and peel all your russet potatoes. Cut them into small and even cubes.

Step 2:

  • Place the potato cubes into a large pot. Cover them with water and some salt.

Step 3:

  • Boil the potatoes until they are very tender. This usually takes about fifteen minutes total.

Step 4:

  • Drain the water from the pot carefully. Set the cooked potatoes aside for a moment.

Step 5:

  • Melt the butter in that same large pot. Add the onions and garlic to butter.

Step 6:

  • Sauté them until they are soft and fragrant. Do not let the garlic turn brown.

Step 7:

  • Sprinkle the flour over the cooked onions now. Stir it for one minute very carefully.

Step 8:

  • Slowly pour in the chicken broth and cream. Whisk the liquid until it is very smooth.

Step 9:

  • Add the cooked potatoes back into the pot. Let the mixture come to a light simmer.

Step 10:

  • Mash some potatoes to thicken the soup more. Leave some chunks for a nice texture.

Step 11:

  • Season the soup with salt and pepper now. Stir it well to mix the spices.

Step 12:

  • Serve the soup hot in large bowls. Add cheese, bacon, and onions on top.

Notes

Use russet potatoes for the best and softest texture.
Stir the soup often so the bottom stays clean.
Add sharp cheddar cheese on top for extra flavor.
Crispy bacon bits add a nice crunch to soup.
Do not boil the soup once you add cream.
Cut potatoes into small cubes to cook them faster.
Use a whisk to remove any lumps of flour.
