Equipment

  • Mixing Bowl
  • Baking Dish
  • Small Bowl
  • Whisk
  • Chef's Knife
  • Measuring cups
  • Measuring Spoons

Ingredients

  • 1.5 lbs GROUND BEEF
  • 1 cup QUICK OATS
  • 1 medium ONION
  • 1 small BELL PEPPER
  • 2 large EGGS
  • 1/2 cup WHOLE MILK
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER
  • 1/2 cup KETCHUP
  • 2 tbsp BROWN SUGAR
  • 1 tbsp YELLOW MUSTARD

Instructions

Step 1:

  • Turn on your oven now. Set it to 350 degrees. Let it get very hot.

Step 2:

  • Find your favorite baking dish. Spray it with non-stick oil. This helps with the cleanup later.

Step 3:

  • Wash your onion and bell pepper. Peel the skin off the onion. Remove all the pepper seeds.

Step 4:

  • Grab a sharp chef's knife. Dice the vegetables into tiny pieces. Small bits cook very fast.

Step 5:

  • Place the ground beef into a bowl. Use a very large mixing bowl. This gives you plenty of space.

Step 6:

  • Add the chopped onions and peppers. Pour in the milk and oats. Crack two eggs into the mix.

Step 7:

  • Sprinkle the salt and pepper over. Use your clean hands to mix. Do not overwork the meat.

Step 8:

  • Shape the meat into a log. Make it even on all sides. Put it in the baking pan.

Step 9:

  • Mix ketchup, sugar, and mustard. This creates a sweet glaze. Stir until it is very smooth.

Step 10:

  • Spread the glaze over the top. Use a spoon to cover it. Make sure every inch is coated.

Step 11:

  • Place the pan in the oven. Bake it for exactly one hour. Your kitchen will smell amazing.

Step 12:

  • Remove the meatloaf from the oven. Let it sit for ten minutes. This locks in the juices.

Notes

  • Do not overmix the meat to keep it soft.
  • Use lean ground beef to avoid too much oil.
  • Let the meatloaf rest before you start slicing it.
  • Sauté the vegetables first for a much softer bite.
  • Line the pan with foil for a faster cleanup.
  • Add a splash of Worcestershire sauce for extra flavor.
  • Check the meat with a digital thermometer often.
