Equipment

  • Large Mixing Bowl
  • Chef Knife
  • Cutting Board
  • Measuring cups
  • Mixing Spoon

Ingredients

  • 2 cups CHICKEN
  • 1/2 cup MAYONNAISE
  • 1 tbsp DIJON MUSTARD
  • 1/2 cup CELERY
  • 1/2 cup RED GRAPES
  • 2 tbsp GREEN ONIONS
  • 1 tbsp FRESH DILL
  • 1 tsp LEMON JUICE
  • 1/2 tsp SALT
  • 1/4 tsp BLACK PEPPER
  • 1/4 cup PECANS

Instructions

Step 1:

  • Chop your cooked chicken into small bite-sized pieces. Place the chicken into your large mixing bowl. Make sure the chicken is cold before you start.

Step 2:

  • Slice the celery and green onions very thinly. Add them to the bowl with the chicken. This adds the first layer of crunch.

Step 3:

  • Cut the red grapes in half carefully. Toss the grape halves into the mixing bowl. The grapes add a lovely natural sweetness.

Step 4:

  • In a small bowl, mix the mayo and mustard. Add the lemon juice and chopped fresh dill. Stir until the dressing is very smooth.

Step 5:

  • Pour the dressing over the chicken and vegetables. Use your spoon to mix everything together well. Ensure every piece of chicken is covered.

Step 6:

  • Add the chopped pecans to the bowl now. Season the salad with salt and pepper. Give it one final gentle stir.

Step 7:

  • Put the bowl in the fridge for one hour. This helps the flavors blend together perfectly. Serve it cold on bread or greens.

Notes

  • Use rotisserie chicken to save a lot of time.
  • Chill the salad for one hour before eating it.
  • Toast the pecans to get a better nutty smell.
  • Cut all veggies the same size for even bites.
  • Add a little honey if you want more sweetness.
  • Use Greek yogurt for a lighter, low-fat version.
  • Always use fresh dill instead of the dried kind.
