Equipment

  • Cast Iron Skillet
  • Large Mixing Bowl
  • Whisk
  • Measuring cups
  • Oven Mitts

Ingredients

  • 1/4 cup SHORTENING
  • 1 cup YELLOW CORNMEAL
  • 1/2 cup ALL-PURPOSE FLOUR
  • 1 tsp SALT
  • 1 tbsp BAKING POWDER
  • 1 cup BUTTERMILK
  • 1/2 cup WHOLE MILK
  • 1 large EGG

Instructions

Step 1:

  • Heat your oven to 450 degrees now. Place the shortening in the cast iron skillet. Put the skillet inside the hot oven. Let the shortening melt and get hot.

Step 2:

  • Grab your large mixing bowl for dry items. Measure the cornmeal and the flour carefully. Add the salt and the baking powder too. Stir these together until they are blended.

Step 3:

  • Use another bowl for the wet ingredients. Whisk the buttermilk and the milk together. Add the egg and whisk it well. The mixture should look very smooth now.

Step 4:

  • Pour the wet mixture into the dry bowl. Stir the batter with a large spoon. Stop stirring once the flour is gone. Do not overmix the batter at all.

Step 5:

  • Pull the hot skillet out of the oven. Pour the batter into the hot grease. It should sizzle around the edges immediately. This builds the famous crunchy crust.

Step 6:

  • Place the skillet back into the oven. Bake it for about 20 minutes total. The top should be a dark gold. The edges should look very crispy.

Notes

Preheat the skillet for a very crispy bottom crust.
Do not overmix to keep the texture light.
