Ingredients
  

  • 54 oz PINTO BEANS 3 cans
  • 1/2 lb BACON
  • 1 lb GROUND BEEF
  • 1 medium YELLOW ONION
  • 1 small GREEN BELL PEPPER
  • 1 cup BARBECUE SAUCE
  • 1/2 cup BROWN SUGAR
  • 2 tbsp YELLOW MUSTARD
  • 1 tbsp APPLE CIDER VINEGAR
  • 1 tsp BLACK PEPPER

Instructions
 

Step 1:

  • Preheat your oven to 350 degrees Fahrenheit. Let the oven get nice and hot first. This ensures even cooking for the beans.

Step 2:

  • Slice your bacon into small, even pieces. Place them into a cold large skillet. Turn the heat to medium-high now.

Step 3:

  • Fry the bacon until it is very crispy. Remove the bacon pieces with a slotted spoon. Keep the grease in the pan for flavor.

Step 4:

  • Add the ground beef to the hot skillet. Break it up with your wooden spoon. Cook it until it is no longer pink.

Step 5:

  • Add the chopped onions and bell peppers. Cook them with the beef for five minutes. They should become very soft and fragrant.

Step 6:

  • Drain the fat from the skillet carefully. Pour the meat and vegetables into the Dutch oven. This is your flavor base.

Step 7:

  • Open the cans of pinto beans now. Do not drain the liquid from the cans. Pour the beans directly into the Dutch oven.

Step 8:

  • Add the barbecue sauce and the brown sugar. Stir in the mustard and the cider vinegar. Sprinkle in the black pepper for heat.

Step 9:

  • Mix all the ingredients until they are combined. Stir in half of the crispy bacon pieces. Save the rest for the very top.

Step 10:

  • Place the lid on the Dutch oven. Put it in the center of the oven. Bake the beans for forty-five minutes.

Step 11:

  • Remove the lid from the Dutch oven carefully. Sprinkle the remaining bacon on the top. Bake for fifteen more minutes without the lid.

Step 12:

  • Take the beans out of the oven. Let them sit for ten minutes to thicken. Serve them while they are still very warm.

Notes

Use thick-cut bacon for a much better texture.
Do not drain the beans for a saucier dish.
Add a little honey for extra floral sweetness.
Sauté the peppers until they are very translucent.
Use a spicy barbecue sauce for more heat.
Make sure the beef is crumbled into small bits.
Let the dish rest so the flavors meld.
