Equipment

  • Large Mixing Bowl
  • Medium Mixing Bowl
  • Box Grater
  • Loaf Pan
  • Whisk
  • Rubber Spatula
  • Measuring Cups and Spoons
  • Zester

Ingredients

  • 1.5 cups ALL-PURPOSE FLOUR
  • 1 cup GRANULATED SUGAR
  • 0.5 tsp BAKING SODA
  • 0.5 tsp BAKING POWDER
  • 0.5 tsp SALT
  • 1.5 cups SHREDDED ZUCCHINI
  • 0.5 cup VEGETABLE OIL
  • 2 large EGGS
  • 1 tsp VANILLA EXTRACT
  • 2 tbsp LEMON JUICE
  • 1 tbsp LEMON ZEST

Instructions

Step 1: Prep Your Oven and Pan

  • Preheat your oven to 350 degrees Fahrenheit now. Grease your loaf pan with butter or spray. This prevents the bread from sticking later. You can also use parchment paper for ease.

Step 2: Mix the Dry Ingredients

  • Whisk the flour and sugar in a bowl. Add the baking powder and baking soda too. Put a pinch of salt in the mix. Stir them until they are well combined.

Step 3: Whisk the Wet Ingredients

  • Crack your eggs into the medium bowl. Add the oil and vanilla extract now. Pour in the fresh lemon juice and zest. Whisk until the mixture looks very smooth.

Step 4: Combine Both Mixtures

  • Pour the wet mix into the dry ingredients. Stir gently with your rubber spatula now. Do not overmix the batter at this point. Stop when you see no more dry flour.

Step 5: Fold in the Zucchini

  • Squeeze the water out of the shredded zucchini. Toss the zucchini into the thick batter. Fold it in gently with the spatula. Make sure the zucchini is spread out evenly.

Step 6: Bake the Bread

  • Pour the batter into the prepared loaf pan. Smooth the top with your spatula carefully. Place the pan in the center of oven. Bake for about 50 to 55 minutes.

Step 7: Cool and Enjoy

  • Check the bread with a clean toothpick. It should come out clean from the center. Let the bread cool in the pan. Slice it and serve to your happy guests.

Notes

  • Always squeeze the zucchini to remove extra water.
  • Too much water makes the bread very soggy.
  • Use fresh lemons instead of bottled juice always.
  • Fresh zest adds a much better citrus aroma.
  • Do not overmix the batter after adding flour.
  • Overmixing makes the bread tough and very chewy.
  • Let the bread cool completely before slicing it. This helps the slices stay nice and neat.
