Ingredients
  

  • 1 cup chopped PRUNES
  • 1 cup VEGETABLE OIL
  • 1.5 cups SUGAR
  • 3 large EGGS
  • 2 cups ALL PURPOSE FLOUR
  • 1 tsp BAKING SODA
  • 1 tsp CINNAMON
  • 1 tsp GROUND CLOVES
  • 1 cup BUTTERMILK
  • 1 tsp VANILLA EXTRACT
  • 0.5 cup BUTTER for glaze
  • 1 cup SUGAR for glaze
  • 0.5 cup BUTTERMILK for glaze
  • 1 tbsp CORN SYRUP for glaze

Instructions
 

Step 1:

  • Turn on your oven to 350. Let it get very hot. Grease your baking pan now. Use butter or cooking spray. Dust it with a little flour.

Step 2:

  • Boil the prunes in some water. Cook them until they are soft. Drain the water away carefully. Mash the prunes with a fork. Let them cool down completely.

Step 3:

  • Mix the sugar and oil together. Use your large mixing bowl. Add the eggs one by one. Beat them into the mixture well. The mix should look pale.

Step 4:

  • Whisk your dry ingredients now. Use a separate medium bowl. Combine flour and the warm spices. Add the baking soda as well. Stir them until fully blended.

Step 5:

  • Add the flour and buttermilk slowly. Start with some of the flour. Then add half the buttermilk. End with the last flour bits. Mix until just combined now.

Step 6:

  • Fold in the mashed prunes. Use a large rubber spatula. Do not overmix the batter here. Add the vanilla extract last. Stir it in very gently.

Step 7:

  • Pour batter into the prepared pan. Smooth the top with a spoon. Tap it on the counter once. This removes any large air bubbles. Place it in the oven.

Step 8:

  • Bake for about forty minutes. The cake should be firm. Use a toothpick to check it. It should come out very clean. Take the cake out carefully.

Step 9:

  • Make the glaze in your saucepan. Melt the butter and sugar. Add the buttermilk and corn syrup. Bring it to a quick boil. Cook for one full minute.

Step 10:

  • Pour hot glaze over hot cake. Use a fork to poke holes. This helps the glaze sink in. Let the cake cool completely. Serve it to your happy guests.

Use very soft prunes for mashing.
