Equipment

  • Large Saucepan
  • Jelly Roll Pan
  • Mixing Bowl
  • Whisk
  • Measuring cups
  • Measuring Spoons
  • Spatula
  • Small Bowl

Ingredients

  • 2 cups ALL PURPOSE FLOUR
  • 2 cups GRANULATED SUGAR
  • 1 tsp SALT
  • 1 cup UNSALTED BUTTER
  • 1 cup WATER
  • 1/2 cup SOUR CREAM
  • 2 large EGGS
  • 1 tsp ALMOND EXTRACT
  • 1 tsp BAKING SODA
  • 1/2 cup WHOLE MILK
  • 4 cups POWDERED SUGAR
  • 1/2 cup CHOPPED PECANS

Instructions

Step 1:

  • Set your oven to 350 degrees now. Grease your large jelly roll pan well. Use butter or a non-stick spray. This prevents the cake from sticking.

Step 2:

  • Mix flour and sugar in a bowl. Add a tiny bit of salt too. Stir them until they are combined. Put this bowl to the side now.

Step 3:

  • Place butter in a large saucepan. Add one cup of water now. Turn the stove to medium high heat. Bring the mixture to a quick boil.

Step 4:

  • Pour the hot liquid into the flour. Stir it very gently with a whisk. Do not overmix the batter yet. Let it cool for a minute.

Step 5:

  • Whisk the sour cream and eggs together. Add the almond extract and baking soda. Pour this into the warm batter now. Mix everything until it is very smooth.

Step 6:

  • Pour the batter into the greased pan. Spread it out to the very edges. Place the pan in the hot oven. Bake it for about twenty minutes.

Step 7:

  • Start the frosting while the cake bakes. Melt more butter in a clean pot. Stir in the milk and some salt. Bring it to a boil quickly.

Step 8:

  • Turn off the heat for the frosting. Whisk in the powdered sugar slowly. Add the almond extract and pecans now. Stir until the icing is very glossy.

Step 9:

  • Take the hot cake out of oven. Pour the hot frosting over the cake. Spread it evenly with a clean spatula. Let the cake cool before you cut.

Notes

  • Use real butter for the best flavor possible.
  • Do not overbake the thin cake layer.
  • Pour the frosting while the cake is hot.
  • Sift the powdered sugar to avoid any lumps.
  • Wait for the frosting to set before cutting.
  • Use a toothpick to check the cake center.
  • Always grease the pan corners very well.
  • Fresh almond extract makes a big difference.
  • Let the eggs reach room temperature first.
  • Measure the flour using a spoon and level.
