Equipment

  • Medium saucepan
  • Wire Whisk
  • Measuring cups
  • Measuring Spoons
  • Wooden Spoon

Ingredients

  • 4 tbsp UNSALTED BUTTER
  • 1/4 cup ALL-PURPOSE FLOUR
  • 1 cup BEEF BROTH
  • 1 cup CHICKEN BROTH
  • 1 tsp GROUND BLACK PEPPER
  • 1/2 tsp GARLIC POWDER
  • 1/2 tsp ONION POWDER
  • 1 tsp CAJUN SEASONING
  • 1/2 tsp WORCESTERSHIRE SAUCE

Instructions

Step 1:

  • Place your butter in the medium saucepan. Turn the heat to a medium setting. Let the butter melt until it is liquid. Do not let the butter turn brown.

Step 2:

  • Add the flour to the melted butter now. Stir it constantly with your wire whisk. This creates a thick paste called a roux. Cook it for about three minutes. It should look like light peanut butter.

Step 3:

  • Pour in the beef broth very slowly. Keep whisking while you pour the liquid. This prevents lumps from forming in the pan. The mixture will start to look thick.

Step 4:

  • Add the chicken broth to the pan next. Continue to whisk the sauce until very smooth. Turn the heat up to medium-high now. Bring the liquid to a gentle simmer.

Step 5:

  • Sprinkle in all of your dry spices now. Add the pepper, garlic, and onion powder. Pour in the Cajun seasoning and Worcestershire sauce. Stir well to combine all the flavors.

Step 6:

  • Lower the heat to a low setting. Let the gravy simmer for five minutes. It will become thick and very glossy. Stir it occasionally so it does not stick.

Step 7:

  • Taste the gravy with a clean spoon. Add more Cajun seasoning if you want heat. Remove the pan from the hot stove. Serve it warm over your favorite side dishes.

Notes

  • Use cold broth to help prevent flour lumps.
  • Whisk constantly during the first few minutes.
  • Cook the roux until it smells like toasted nuts.
  • Adjust the pepper to fit your own heat level.
  • Do not boil the gravy on very high heat.
  • Add a splash of water if it gets thick.
  • Use high-quality beef broth for the best color.
  • Keep the heat low once the gravy thickens.
