Ingredients
  

  • 1.5 lbs CHICKEN BREAST
  • 30 oz GREAT NORTHERN BEANS
  • 32 oz CHICKEN BROTH
  • 1 medium ONION
  • 3 cloves GARLIC
  • 4 oz GREEN CHILIES
  • 2 tsp CUMIN
  • 1 tsp OREGON
  • 0.25 tsp CAYENNE PEPPER
  • 0.5 cup HEAVY CREAM
  • 0.5 cup SOUR CREAM
  • 1 tsp SALT
  • 0.5 tsp BLACK PEPPER

Instructions
 

Step 1:

  • Place your large pot on the stove. Turn the heat to medium now. Add a small splash of oil. Let the oil get hot for one minute.

Step 2:

  • Add the chopped onions to the hot pot. Stir them with your wooden spoon. Cook them until they look clear. This usually takes about five minutes.

Step 3:

  • Put the minced garlic into the pot. Stir it quickly with the onions. Cook the garlic for only one minute. Do not let the garlic turn brown.

Step 4:

  • Pour the chicken broth into the pot slowly. Add the shredded chicken meat next. Stir the pot to mix everything together. Bring the liquid to a light simmer.

Step 5:

  • Open the cans of white beans now. Drain the liquid out of the cans. Add the beans to your soup pot. Stir them in very gently.

Step 6:

  • Add the green chilies and all the spices. Put in the cumin and the oregano. Add the cayenne pepper and salt now. Stir well to spread the spices out.

Step 7:

  • Let the chili cook for fifteen minutes. Keep the heat on low or medium. This allows the flavors to blend together. The soup will start to smell great.

Step 8:

  • Pour the heavy cream into the pot. Stir it until the soup is white. Let it cook for five more minutes. The liquid will get slightly thicker now.

Step 9:

  • Turn off the heat on the stove. Stir in the sour cream last. This makes the chili extra smooth. Your meal is now ready to eat.

Notes

Use a rotisserie chicken to save some time.
Mash some beans to make the chili thicker.
