Equipment

  • Oven
  • Cake Pans
  • Mixing Bowl
  • Electric Mixer
  • Measuring cups
  • Spatula
  • Wire Rack

Ingredients

  • 1 box WHITE CAKE MIX
  • 1 package STRAWBERRY GELATIN
  • 0.5 cup VEGETABLE OIL
  • 4 large EGGS
  • 10 oz FROZEN STRAWBERRIES
  • 1 package CREAM CHEESE
  • 0.5 cup UNSALTED BUTTER
  • 4 cups POWDERED SUGAR

Instructions

Step 1:

  • Heat your oven to 350 degrees now. Grease and flour two round cake pans. This stops the cake from sticking later.

Step 2:

  • Dump the cake mix into a large bowl. Add the strawberry gelatin powder to it. Stir them together with a big spoon.

Step 3:

  • Add the oil and the mashed strawberries. Pour in the four large eggs now. Your batter will turn a bright pink color.

Step 4:

  • Use your electric mixer on medium speed. Beat the batter for two full minutes. It should look very smooth and thick.

Step 5:

  • Divide the batter between the two pans. Use a spatula to level the tops. Make sure they have the same amount.

Step 6:

  • Bake the cakes for thirty minutes total. Check them with a small wooden toothpick. It should come out very clean and dry.

Step 7:

  • Let the cakes cool in the pans. Wait for ten minutes before moving them. Then place them on a wire rack.

Step 8:

  • Mix the cream cheese and butter together. Add the powdered sugar and more strawberries. Beat until the frosting is very fluffy.

Step 9:

  • Place one cake layer on a plate. Spread a thick layer of frosting on top. Add the second cake layer very carefully.

Step 10:

  • Cover the top and sides with frosting. Use a smooth motion for a pretty look. Serve the cake to your happy guests.

Notes

  • Make sure your eggs are at room temperature always.
  • Thaw the frozen strawberries completely before you mash them.
  • Do not overmix the batter after adding the eggs.
  • Grease the pans with butter and a little flour.
  • Let the cake cool fully before you add frosting.
  • Sift the powdered sugar to avoid small white lumps.
  • Use full fat cream cheese for a very rich taste.
  • Store the cake in the fridge to keep fresh.
